The idea had been on my mind for some time – I’d dabbled with it back in the early 90s, but never really went beyond selling cheesecakes to a few restaurants back then because I was baking them in my mother’s kitchen one by one. Throughout the time beyond, I did what most would call filler jobs, things that paid the bills, while not really feeling satisfied with any of them, and always believing I could find something better with less hassle. And as the jobs came and went, I felt as if I was somehow missing that big piece of enjoyment one gets when they do something they truly love.
So, at the beginning of 2018 I decided this would be the year I would figure it out. And after all my contemplation and searching for the perfect position, I landed back on my grandma’s cheesecake recipe. Could it become something I could make a living from? There was only one way to find out, and I’d need to take a financial risk to do it.
I immediately got to work in my kitchen baking cheesecake after cheesecake to test the recipe with friends, and strangers because we all know those closest to us don’t want to hurt our feelings, so they lie to protect us, which has its good, and bad points. The facial expressions of the strangers, however said it all. So many pleasing expressions, and mmm’s, and “how come I’ve never tasted cheesecake like this before” comments. I must have done a couple of hundred tastings before coming to the idea of a cheesecake sandwich, which consists of my two favorite desserts combined; cookies and my grandma’s cheesecake.
The other revelation I encountered while baking my Grandma’s Cheesecake Sandwiches recently was that I was playing with my favorite childhood toy all over again, (my Kenner Easy-Bake Oven), only this time I was doing it with a real oven in a real bakery.
I think I’m finally on to something that will bring joy not just to myself, but to all the people who take delight in consuming them too.
